Method
- Preheat oven to 300°F (150°C).
- Pat pork ribs dry with paper towels.
- Rub ribs with olive oil on all sides.
- Mix spices and brown sugar in a bowl.
- Coat ribs evenly with seasoning mixture.
- Arrange ribs in a baking dish and cover tightly with foil.
- Roast covered for 90 minutes until tender.
- Uncover, increase oven to 425°F (220°C), and roast 20–30 minutes.
- Brush with barbecue sauce if using and return to oven.
- Rest ribs 10 minutes before serving.
Notes
Slow roasting ensures tender ribs; uncovering at the end creates caramelization.
