- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Clean the mushrooms with a damp paper towel and trim the stems if necessary. Cut larger mushrooms in half to ensure even cooking.
- In a large mixing bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, olive oil, sesame oil, black pepper, and red pepper flakes if using.
- Add the prepared mushrooms to the bowl and toss thoroughly to ensure all mushrooms are evenly coated with the glaze mixture.
- Arrange the mushrooms in a single layer on the prepared baking sheet, making sure not to overcrowd them.
- Roast in the preheated oven for 20-25 minutes, stirring once halfway through, until the mushrooms are golden brown and caramelized.
- Remove from oven and let cool for 2-3 minutes. Taste and adjust seasoning with salt if needed.
- Garnish with freshly chopped parsley before serving immediately while hot.
Notes
For extra flavor, drizzle with additional sesame oil before serving. Store leftovers in refrigerator for up to 4 days and reheat in oven at 350°F for 10 minutes.
