  • 1.5 pounds baby bella or button mushrooms cleaned and halved
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 2 tbsp fresh parsley chopped
  • 1 tsp sesame oil
  • salt to taste

Method
 

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Clean the mushrooms with a damp paper towel and trim the stems if necessary. Cut larger mushrooms in half to ensure even cooking.
  3. In a large mixing bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, olive oil, sesame oil, black pepper, and red pepper flakes if using.
  4. Add the prepared mushrooms to the bowl and toss thoroughly to ensure all mushrooms are evenly coated with the glaze mixture.
  5. Arrange the mushrooms in a single layer on the prepared baking sheet, making sure not to overcrowd them.
  6. Roast in the preheated oven for 20-25 minutes, stirring once halfway through, until the mushrooms are golden brown and caramelized.
  7. Remove from oven and let cool for 2-3 minutes. Taste and adjust seasoning with salt if needed.
  8. Garnish with freshly chopped parsley before serving immediately while hot.

Notes

For extra flavor, drizzle with additional sesame oil before serving. Store leftovers in refrigerator for up to 4 days and reheat in oven at 350°F for 10 minutes.
