Ingredients
  

Potatoes
  • 1.5 lb baby potatoes
  • 3 tbsp olive oil
  • 1 tsp salt
Explosiva Sauce
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp hot paprika
  • 2 tbsp tomato paste
  • 1 tbsp red wine vinegar
Garlic Aioli
  • 0.5 cup mayonnaise
  • 1 clove garlic grated
  • 1 tbsp lemon juice

Method
 

  1. Boil potatoes until fork-tender. Drain and steam dry.
  2. Smash potatoes, season, and roast until crispy.
  3. Prepare spicy sauce by cooking garlic, spices, and tomato paste.
  4. Mix aioli ingredients until smooth.
  5. Top hot potatoes with sauce and aioli before serving.

Notes

Best served immediately while hot and crispy.
