- Preheat oven to 350°F (175°C) and grease a casserole dish.
- Blanch broccoli in boiling salted water until bright green and tender-crisp. Drain well.
- In a large bowl, mix soup, sour cream, melted butter, eggs, salt, and pepper until smooth.
- Stir in shredded cheddar cheese.
- Fold broccoli into the mixture and spread evenly in the casserole dish.
- Mix crushed crackers with melted butter and sprinkle over the top.
- Bake uncovered for 40–45 minutes until bubbly and golden brown.
Notes
Can be assembled a day ahead and baked before serving.
