Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.33 cup unsalted butter melted
  • 2 tbsp granulated sugar
Cream Filling
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1.5 cups heavy whipping cream
Pecan Topping
  • 1.5 cups pecans chopped
  • 0.5 cup brown sugar
  • 0.5 cup corn syrup
  • 2 eggs large
  • 2 tbsp unsalted butter
  • 0.25 tsp salt

Method
 

  1. Mix crust ingredients and press into pie dish. Chill.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth.
  3. Whip cream to stiff peaks and fold into cream cheese mixture.
  4. Spread filling into crust and refrigerate.
  5. Heat brown sugar, corn syrup, butter, and salt until smooth.
  6. Whisk in eggs, then stir in pecans.
  7. Cool slightly and spread over cream layer.
  8. Chill at least 4 hours before serving.

Chill fully for clean slices and best texture.
