Ingredients
  

Chicken
  • 2 lb chicken thighs bone-in or boneless
  • 4 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp lime juice
  • 2 tbsp olive oil
Rice
  • 1.5 cups long-grain rice
  • 3 cups chicken broth
  • 1 tsp turmeric
Green Sauce
  • 1 cup fresh cilantro packed
  • 2 jalapeƱos seeded
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tbsp lime juice

Equipment

  • Large skillet

Method
 

  1. Marinate chicken with spices, garlic, lime juice, and olive oil.
  2. Cook chicken in a hot skillet until golden and cooked through.
  3. Cook rice with garlic, broth, and turmeric until fluffy.
  4. Blend all green sauce ingredients until smooth.
  5. Serve chicken over rice with green sauce drizzled on top.

Notes

Adjust green sauce heat by adding or removing jalapeƱo seeds.
