Ingredients
  

Chicken
  • 1.5 lb chicken thighs bone-in or boneless
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 2 tbsp lime juice fresh
  • 2 tbsp olive oil
Rice
  • 1.5 cups long-grain rice
  • 3 cups chicken broth
  • 2 cloves garlic minced
  • 0.5 cup onion finely chopped
Green Sauce
  • 1 cup fresh cilantro packed
  • 1-2 jalapeños seeded
  • 2 cloves garlic
  • 3 tbsp lime juice fresh
  • 0.5 cup mayonnaise or Greek yogurt
  • 2 tbsp olive oil

Equipment

  • Skillet or pan

Method
 

  1. Marinate chicken with spices, garlic, lime juice, and olive oil.
  2. Cook chicken until golden and fully cooked; rest before serving.
  3. Sauté onion and garlic, add rice and broth, and cook until fluffy.
  4. Blend green sauce ingredients until smooth.
  5. Serve chicken over rice and drizzle with green sauce.

Notes

Green sauce can be made ahead and stored refrigerated for up to 3 days.
