Ingredients
  

  • 2 lb chicken thighs
  • 3 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Season and marinate chicken.
  2. Roast chicken until golden and cooked through.
  3. Blend aji verde sauce ingredients until smooth.
  4. Cook rice and finish with lime and cilantro.
  5. Serve chicken with sauce and rice.
