Ingredients
  

Sandwich
  • 4 slices sourdough bread
  • 2 tbsp butter softened
  • 4 tbsp basil pesto
  • 4 slices mozzarella cheese
  • 2 tbsp grated Parmesan optional

Equipment

  • Skillet
  • Spatula
  • Butter knife
  • Cutting board

Method
 

  1. Butter one side of each bread slice.
  2. Spread pesto on the unbuttered side of two slices.
  3. Layer cheese and top with remaining bread slices.
  4. Cook in skillet over medium-low heat until golden on both sides and cheese melts.
  5. Slice and serve warm.

Notes

Cook on medium-low heat to prevent burning before cheese melts.
