Ingredients
  

  • 4 chicken breasts boneless skinless
  • 2 tbsp olive oil
  • 2 peaches sliced
  • 3 cloves garlic minced
  • 0.5 cup white wine dry
  • 0.25 cup chicken broth
  • 0.25 cup basil pesto
  • 2 burrata cheese balls
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp butter
  • fresh basil for garnish

Method
 

  1. Season chicken breasts with salt and pepper.
  2. Sear chicken in olive oil until golden on both sides.
  3. Cook garlic in the same skillet until fragrant.
  4. Add sliced peaches and cook until slightly softened.
  5. Deglaze the pan with white wine.
  6. Add chicken broth and pesto and stir well.
  7. Return chicken to the skillet and simmer until cooked through.
  8. Stir in butter for richness.
  9. Top with burrata and garnish with basil before serving.
