Ingredients
  

Relish Base
  • 3 red bell peppers sliced
  • 2 yellow bell peppers sliced
  • 1 green bell pepper sliced
  • 2 yellow onions thinly sliced
  • 2 cups white vinegar 5% acidity
  • 1.5 cups granulated sugar
  • 1 tsp salt
  • 1 tsp mustard seeds optional
  • 0.5 tsp celery seed optional
  • 1 clove garlic minced, optional

  • Sterilized jars

Method
 

  1. Combine vinegar, sugar, and salt in a large pot and bring to a gentle simmer.
  2. Add sliced peppers, onions, and optional seasonings.
  3. Simmer for 10–15 minutes until vegetables soften slightly.
  4. Cool slightly, then ladle into sterilized jars.
  5. Seal jars and refrigerate or process in a boiling water bath for 10 minutes.

Notes

For deeper flavor, let the relish rest for 24 hours before using. Keeps up to 3 months refrigerated.
