Method
- Preheat oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, mix pineapple, sugar, eggs, flour, melted butter, and vanilla.
- Spread mixture evenly into baking dish.
- Combine crushed crackers with 2 tbsp pineapple juice and extra butter. Sprinkle on top.
- Bake for 35–40 minutes until golden and bubbling. Cool slightly before serving.
Notes
Serve warm as a side dish or dessert. Drain pineapple well to prevent excess moisture.
