Main Ingredients
  • 1 can (20 oz) pineapple chunks drained, reserve 2 tbsp juice
  • 0.75 cup granulated sugar
  • 2 eggs lightly beaten
  • 0.25 cup all-purpose flour
  • 0.5 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 1 sleeve Ritz crackers crushed

Method
 

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix pineapple, sugar, eggs, flour, melted butter, and vanilla.
  3. Spread mixture evenly into baking dish.
  4. Combine crushed crackers with 2 tbsp pineapple juice and extra butter. Sprinkle on top.
  5. Bake for 35–40 minutes until golden and bubbling. Cool slightly before serving.

Notes

Serve warm as a side dish or dessert. Drain pineapple well to prevent excess moisture.
