Method
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Whisk flour, sugar, baking soda, baking powder, and salt in a bowl.
- In another bowl, mix eggs, pineapple with juice, oil, and vanilla.
- Combine wet and dry ingredients, mixing just until incorporated.
- Pour batter into pan and smooth the top.
- Bake 55–65 minutes or until a toothpick comes out clean.
- Cool 10 minutes, then transfer to a rack to cool completely.
Notes
Add coconut or nuts for variation. Store wrapped for best moisture.
