Ingredients
  

Rice Base
  • 3 cups cooked jasmine rice chilled
  • 1.5 cups fresh pineapple diced
  • 1 red bell pepper chopped
  • 3 green onions sliced
  • 2 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 0.5 tsp red chili flakes adjust to taste
  • 0.5 cup roasted cashews optional
  • 0.5 lime juiced

Equipment

  • Large skillet or wok
  • Cutting board

Method
 

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Sauté minced garlic for 30 seconds until fragrant.
  3. Add chopped red bell pepper and cook for 2–3 minutes.
  4. Stir in diced pineapple and cook briefly to caramelize.
  5. Add chilled jasmine rice and break apart any clumps.
  6. Pour in soy sauce, sesame oil, and chili flakes. Stir well.
  7. Mix in roasted cashews and sliced green onions.
  8. Finish with fresh lime juice, adjust seasoning, and serve hot.

Notes

Use day-old chilled rice for best texture. Customize with chicken, shrimp, or tofu for added protein.
