- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk flour, baking soda, and salt in a bowl.
- Cream butter and sugars until fluffy.
- Mix in pudding mix, eggs, and vanilla.
- Gradually add dry ingredients.
- Fold in pistachios and chocolate chips.
- Scoop onto baking sheets and bake 10–12 minutes.
- Cool and serve.
Notes
Do not overbake for soft cookies. Chill dough for thicker texture.
