Method
- Preheat oven to 325°F (165°C) and line baking sheet with parchment paper.
- Cream butter and powdered sugar until smooth.
- Mix in vanilla extract.
- Add flour and salt, mixing just until combined.
- Fold in chopped pistachios.
- Shape dough, slice cookies, and place on baking sheet.
- Bake 18–22 minutes until lightly golden.
- Cool completely, then dip cookies in melted chocolate.
