Ingredients
  

Shortbread Dough
  • 1 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.25 tsp salt
  • 0.75 cup pistachios finely chopped
Chocolate Dip
  • 6 oz dark or semi-sweet chocolate melted

Method
 

  1. Preheat oven to 325°F (165°C) and line baking sheet with parchment paper.
  2. Cream butter and powdered sugar until smooth.
  3. Mix in vanilla extract.
  4. Add flour and salt, mixing just until combined.
  5. Fold in chopped pistachios.
  6. Shape dough, slice cookies, and place on baking sheet.
  7. Bake 18–22 minutes until lightly golden.
  8. Cool completely, then dip cookies in melted chocolate.

Notes

Allow chocolate to fully set before stacking or storing.
