Ingredients
  

  • 6 cups mixed salad greens
  • 1 cup pomegranate arils
  • 2 oranges peeled and sliced
  • 0.5 cup feta cheese crumbled
  • 0.5 cup candied pecans
  • 2 tbsp Dijon mustard
  • 3 tbsp honey
  • 0.25 cup olive oil
  • 1 tbsp apple cider vinegar
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Place washed and dried salad greens into a large serving bowl.
  2. Top with pomegranate arils, orange slices, feta cheese, and candied pecans.
  3. In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, salt, and black pepper.
  4. Slowly drizzle in olive oil while whisking until the dressing is smooth and emulsified.
  5. Drizzle dressing over the salad just before serving and toss gently if desired.

Notes

Dress the salad just before serving to keep the greens crisp.
