Ingredients
  

Pumpkin Filling
  • 15 oz pumpkin purée 1 can
  • 0.5 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 eggs
  • 1 cup milk or evaporated milk
  • 1.5 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Cinnamon Streusel
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • 0.5 cup cold butter cubed
  • salt pinch

Method
 

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. Whisk pumpkin purée, sugars, eggs, milk, spices, vanilla, and salt.
  3. Pour filling into baking dish.
  4. Mix oats, flour, brown sugar, cinnamon, and salt in a bowl.
  5. Cut in cold butter until crumbly.
  6. Sprinkle topping over pumpkin filling.
  7. Bake 45–55 minutes until topping is golden and filling is set.
  8. Cool slightly and serve warm.
