- In a medium bowl, combine pumpkin puree, brown sugar, pumpkin pie spice, cinnamon, nutmeg, salt, and cream cheese. Mix until smooth.
- Flatten each bread slice with a rolling pin to make it pliable.
- Spread pumpkin filling on each slice and roll tightly. Place seam side down.
- Whisk together eggs, milk, vanilla, cinnamon, and salt in a shallow bowl.
- Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture and cook 2–3 minutes per side until golden.
- Serve warm with optional toppings: maple syrup, powdered sugar, whipped cream, or nuts.
Notes
For best flavor, use fresh pumpkin puree and cook roll-ups just until golden to prevent dryness.
