Ingredients
  

Pumpkin Filling
  • 1 cup pumpkin puree
  • 3 tbsp brown sugar
  • 1 tsp pumpkin pie spice
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • Pinch salt
  • 2 tbsp cream cheese softened
French Toast
  • 8 slices white sandwich bread crusts removed
  • 2 eggs large
  • 0.25 cup milk
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
  • Pinch salt
  • butter for frying

Method
 

  1. In a medium bowl, combine pumpkin puree, brown sugar, pumpkin pie spice, cinnamon, nutmeg, salt, and cream cheese. Mix until smooth.
  2. Flatten each bread slice with a rolling pin to make it pliable.
  3. Spread pumpkin filling on each slice and roll tightly. Place seam side down.
  4. Whisk together eggs, milk, vanilla, cinnamon, and salt in a shallow bowl.
  5. Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture and cook 2–3 minutes per side until golden.
  6. Serve warm with optional toppings: maple syrup, powdered sugar, whipped cream, or nuts.

Notes

For best flavor, use fresh pumpkin puree and cook roll-ups just until golden to prevent dryness.
