Method
- Season diced chicken with Cajun seasoning, paprika, salt, and pepper.
- Cook chicken in olive oil in a skillet until lightly browned.
- Sauté onion and bell pepper in the same pan until softened.
- Add garlic and cook briefly until fragrant.
- Stir in rice and chicken broth then return chicken to the pan.
- Cover and simmer 15–18 minutes until rice is tender.
- Fluff rice and stir in parsley and green onions before serving.
