Ingredients
  

Chicken and Rice
  • 1 lb chicken breast diced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 bell pepper diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp parsley chopped
  • 2 green onions sliced

Method
 

  1. Season diced chicken with Cajun seasoning, paprika, salt, and pepper.
  2. Cook chicken in olive oil in a skillet until lightly browned.
  3. Sauté onion and bell pepper in the same pan until softened.
  4. Add garlic and cook briefly until fragrant.
  5. Stir in rice and chicken broth then return chicken to the pan.
  6. Cover and simmer 15–18 minutes until rice is tender.
  7. Fluff rice and stir in parsley and green onions before serving.

Notes

Add corn, tomatoes, or smoked sausage for extra flavor variations.
