Ingredients
  

Main Ingredients
  • 1.5 cups raspberries fresh or frozen
  • 2 cups frozen pineapple chunks
  • 1 cup full-fat coconut milk
  • 0.5 cup pineapple juice
  • 1-2 tbsp honey or simple syrup to taste
  • 1 tbsp fresh lime juice
  • 1-2 cups ice as needed
  • 1-2 oz white rum optional

Method
 

  1. Add raspberries, frozen pineapple, coconut milk, pineapple juice, honey, and lime juice to a blender.
  2. Add ice and blend until smooth and creamy.
  3. Taste and adjust sweetness or thickness as desired.
  4. Add rum if making a cocktail version and blend briefly.
  5. Pour into glasses, garnish, and serve immediately.

Notes

For a thicker drink, use all frozen fruit and reduce liquid slightly. For a lighter version, reduce coconut milk and add more pineapple juice.
