Ingredients
  

Ravioli Pasta
  • 20 fresh ravioli cheese or spinach
  • 1 bunch asparagus trimmed and cut
  • 1 cup cherry tomatoes halved
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp fresh basil chopped
  • 2 tbsp fresh parsley chopped
  • 1 tbsp lemon juice

Equipment

  • Large pot
  • Skillet
  • Colander
  • Wooden spoon

Method
 

  1. Cook ravioli according to package instructions.
  2. Heat olive oil in a skillet and sauté asparagus.
  3. Add garlic and cherry tomatoes and cook until softened.
  4. Add cooked ravioli and toss with vegetables.
  5. Season with salt, pepper, and lemon juice.
  6. Add herbs and Parmesan cheese and toss gently.
  7. Serve immediately with extra Parmesan.

Notes

Add grilled chicken or shrimp for extra protein.
