Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 1 cup ricotta cheese whole milk preferred
  • 0.5 cup parmesan cheese grated
  • 2 cloves garlic minced
  • 1 tsp lemon zest
  • 1 egg
  • 1 tbsp olive oil
  • 1 tsp Italian herbs
  • salt to taste
  • black pepper to taste
  • 2 tbsp breadcrumbs optional

Equipment

  • Baking dish
  • Mixing bowl
  • Spoon or spatula

Method
 

  1. Preheat oven and grease a baking dish.
  2. Season chicken and place in baking dish.
  3. Mix ricotta, parmesan, garlic, lemon zest, egg, herbs, and olive oil.
  4. Spread ricotta mixture over chicken.
  5. Bake until chicken is cooked through and topping is lightly golden.
  6. Rest briefly before serving.

Notes

Broil briefly at the end for extra color if desired.
