  • 2 pounds fresh Brussels sprouts trimmed and halved
  • 8 ounces thick-cut bacon chopped into pieces
  • 0.5 cup dried cranberries
  • 0.5 cup chopped pecans
  • 3 tbsp extra virgin olive oil
  • 1 tsp coarse sea salt
  • 0.5 tsp freshly ground black pepper
  • 1 tbsp balsamic vinegar optional

  • Large rimmed baking sheet
  • Sharp knife
  • Cutting board
  • Large mixing bowl

Method
 

  1. Preheat oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
  2. Trim Brussels sprouts and remove yellowed outer leaves, then cut each sprout in half lengthwise.
  3. Place chopped bacon pieces on prepared baking sheet and bake for 8-10 minutes until partially crispy.
  4. Add halved Brussels sprouts to the sheet with bacon, drizzle with olive oil, and season with salt and pepper.
  5. Toss thoroughly and arrange Brussels sprouts cut-side down for maximum caramelization.
  6. Roast for 20-25 minutes until Brussels sprouts are golden brown and tender with crispy edges.
  7. Remove from oven and immediately sprinkle with dried cranberries and chopped pecans.
  8. Drizzle with balsamic vinegar if desired and serve immediately while hot.

Notes

For best results, don't overcrowd the baking sheet. Use two sheets if necessary. Brussels sprouts should be cut-side down for optimal caramelization.
