Crispy roasted baby potatoes smashed and coated in rich garlic butter for the ultimate comforting side dish.

Ingredients
  

  • 1.5 lbs baby potatoes
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp parsley chopped
  • 0.25 cup Parmesan cheese optional

Equipment

  • Large pot
  • Baking sheet
  • Potato masher
  • Small saucepan

Method
 

  1. Preheat oven to 425°F and line a baking sheet.
  2. Boil potatoes in salted water for about 15 minutes until tender.
  3. Drain and place potatoes on baking sheet.
  4. Gently smash each potato with a glass or masher.
  5. Melt butter with olive oil and garlic.
  6. Drizzle garlic butter over potatoes and season.
  7. Roast for 20–25 minutes until crispy and golden.
  8. Top with parsley and Parmesan before serving.

Notes

For extra crispiness, broil for the last 2 minutes.
