- Preheat oven to 425°F and line a baking sheet.
- Boil potatoes in salted water for about 15 minutes until tender.
- Drain and place potatoes on baking sheet.
- Gently smash each potato with a glass or masher.
- Melt butter with olive oil and garlic.
- Drizzle garlic butter over potatoes and season.
- Roast for 20–25 minutes until crispy and golden.
- Top with parsley and Parmesan before serving.
Notes
For extra crispiness, broil for the last 2 minutes.
