Ingredients
  

  • 2 lb potatoes russet or Yukon Gold, peeled and diced
  • 2 garlic bulbs
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 onion diced
  • 4 cups broth vegetable or chicken
  • 1 cup heavy cream or whole milk
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Baking sheet or foil
  • Large pot
  • Immersion blender or blender

Method
 

  1. Roast garlic until soft and golden.
  2. Sauté onion in butter until translucent.
  3. Add potatoes and broth; simmer until tender.
  4. Squeeze roasted garlic into the pot.
  5. Blend soup until smooth.
  6. Stir in cream, season, and heat gently.
