- Roast jalapeños until skins blister, then peel and chop.
- Mix jalapeños with cream cheese, garlic, lime juice, salt, pepper, smoked paprika, and cilantro.
- Butter one side of each bread slice.
- Spread jalapeño dip on the unbuttered sides of two slices.
- Top with cheddar and mozzarella, then with remaining bread slices.
- Heat a skillet on medium and cook sandwiches 3–4 minutes per side until golden and melted.
- Serve hot and enjoy the melty spicy goodness.
Notes
Leave jalapeño seeds in if you want extra heat.
