Ingredients
  

Roasted Jalapeño Dip
  • 3 jalapeños roasted and chopped
  • 4 oz cream cheese softened
  • 1 clove garlic minced
  • 1 tbsp lime juice
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp smoked paprika
  • 2 tbsp cilantro optional, chopped
Grilled Cheese
  • 4 slices bread sourdough or thick sliced
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella or Monterey Jack shredded
  • 2 tbsp butter softened

Equipment

  • Mixing bowl

Method
 

  1. Roast jalapeños until skins blister, then peel and chop.
  2. Mix jalapeños with cream cheese, garlic, lime juice, salt, pepper, smoked paprika, and cilantro.
  3. Butter one side of each bread slice.
  4. Spread jalapeño dip on the unbuttered sides of two slices.
  5. Top with cheddar and mozzarella, then with remaining bread slices.
  6. Heat a skillet on medium and cook sandwiches 3–4 minutes per side until golden and melted.
  7. Serve hot and enjoy the melty spicy goodness.

Notes

Leave jalapeño seeds in if you want extra heat.
