- Preheat oven to 425°F (220°C).
- Toss potatoes, onions, tomatoes, and garlic with olive oil on a baking sheet.
- Mix oregano, thyme, paprika, garlic powder, onion powder, salt, pepper, and lemon zest.
- Rub seasoning onto chicken thighs and place on top of potatoes.
- Roast 40–45 minutes until chicken is crispy and potatoes are tender.
- Broil 2–3 minutes for extra crispiness if desired.
- Finish with fresh lemon juice and parsley before serving.
