Ingredients
  

  • 4 cups kale finely chopped
  • 2 cups green cabbage shredded
  • 1 cup carrots shredded
  • 0.75 cup roasted peanuts
  • 0.5 cup wonton strips
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil

Equipment

  • Large mixing bowl
  • Small mixing bowl
  • Whisk

Method
 

  1. Chop kale and place in large bowl.
  2. Add cabbage and carrots.
  3. Whisk together peanut butter, soy sauce, vinegar, honey, sesame oil, garlic, and ginger.
  4. Thin dressing with warm water.
  5. Pour dressing over salad and toss well.
  6. Add peanuts, wonton strips, and green onions.
  7. Sprinkle sesame seeds and serve.
