Ingredients
  

Sweet Potato Rounds
  • 2 large sweet potatoes peeled and sliced into ½-inch rounds
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp smoked paprika optional
Topping
  • 3 tbsp honey plus extra for drizzling
  • 0.5 cup feta cheese crumbled
  • 1 tbsp fresh rosemary or thyme chopped
  • 1 tbsp fresh parsley chopped, for garnish
  • 2 tbsp chopped walnuts or pecans optional, for crunch

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and slice sweet potatoes into ½-inch rounds, place in a mixing bowl.
  3. Add olive oil, salt, pepper, and paprika. Toss to coat evenly.
  4. Arrange rounds in a single layer on the baking sheet.
  5. Roast 25–30 minutes, flipping halfway, until golden and tender.
  6. Transfer to serving platter, drizzle with honey, sprinkle with feta and herbs.
  7. Add chopped nuts if using, garnish with parsley, and serve warm.

Perfect for holidays or weeknight dinners. Add hot honey for a spicy twist.
