- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and slice sweet potatoes into ½-inch rounds, place in a mixing bowl.
- Add olive oil, salt, pepper, and paprika. Toss to coat evenly.
- Arrange rounds in a single layer on the baking sheet.
- Roast 25–30 minutes, flipping halfway, until golden and tender.
- Transfer to serving platter, drizzle with honey, sprinkle with feta and herbs.
- Add chopped nuts if using, garnish with parsley, and serve warm.
