Ingredients
  

  • 2 large sweet potatoes sliced into rounds
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 0.5 cup feta cheese crumbled
  • 1 tsp fresh thyme leaves
  • 0.75 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Slice sweet potatoes into even rounds.
  2. Toss with olive oil, salt, and pepper.
  3. Roast until tender and caramelized, flipping halfway.
  4. Drizzle with honey and top with feta.
  5. Garnish with thyme and serve warm.

Notes

Add feta while potatoes are warm so it softens slightly without melting.
