Ingredients
  

  • 12 oz orzo pasta
  • 1.5 cups zucchini chopped
  • 1 cup red bell pepper chopped
  • 1 cup cherry tomatoes halved
  • 0.75 cup red onion sliced
  • 3 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice fresh
  • 0.5 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped

Method
 

  1. Roast vegetables with olive oil and seasoning at 425°F until tender and caramelized.
  2. Cook orzo in salted water until al dente; drain.
  3. Combine orzo and roasted vegetables in a large bowl.
  4. Add lemon juice, herbs, and Parmesan; toss gently.

Notes

Serve warm or chilled; add protein for a complete meal.
