Method
- Preheat oven to 400°F and roast garlic bulb wrapped in foil with olive oil for 30–35 minutes.
- Sauté diced onion in olive oil until soft.
- Add minced garlic and rosemary, cook until fragrant.
- Add white beans and broth, simmer 10–15 minutes.
- Squeeze roasted garlic into pot.
- Blend until smooth or desired consistency.
- Season and serve hot.
Notes
Add lemon juice for brightness or greens for extra nutrition.
