- Line an 8x8-inch pan with parchment paper.
- Combine quinoa and pistachios in a large bowl.
- Melt chocolate, almond butter, and coconut oil until smooth.
- Stir in honey and vanilla extract.
- Pour chocolate mixture over quinoa mixture and stir to coat.
- Press mixture firmly into the prepared pan.
- Sprinkle with flaky sea salt and extra pistachios.
- Refrigerate until firm, then slice into bars.
Notes
For extra crunch, toast quinoa in a dry skillet for a few minutes before mixing.
