Ingredients
  

Crunch Bars
  • 1 cup cooked quinoa cooled
  • 0.75 cup pistachios chopped
  • 1.5 cups dark chocolate chips
  • 0.25 cup almond butter
  • 2 tbsp coconut oil
  • 3 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 0.5 tsp flaky sea salt plus extra for topping

Method
 

  1. Line an 8x8-inch pan with parchment paper.
  2. Combine quinoa and pistachios in a large bowl.
  3. Melt chocolate, almond butter, and coconut oil until smooth.
  4. Stir in honey and vanilla extract.
  5. Pour chocolate mixture over quinoa mixture and stir to coat.
  6. Press mixture firmly into the prepared pan.
  7. Sprinkle with flaky sea salt and extra pistachios.
  8. Refrigerate until firm, then slice into bars.

Notes

For extra crunch, toast quinoa in a dry skillet for a few minutes before mixing.
