  • 2 medium butternut squash halved and seeded
  • 2 tbsp olive oil
  • 1 lb Italian sausage sweet or spicy
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup breadcrumbs optional
  • 0.5 cup Parmesan cheese grated
  • 0.5 cup mozzarella cheese shredded

Method
 

  1. Preheat oven to 400°F (205°C).
  2. Brush squash halves with olive oil, season with salt and pepper, and place cut-side down on a baking sheet.
  3. Roast for 40–50 minutes until tender and caramelized.
  4. Cook sausage in a skillet until browned, breaking up into crumbles.
  5. Add onion and garlic; cook until softened.
  6. Stir in sage, thyme, paprika, salt, and pepper.
  7. Add breadcrumbs, Parmesan, and half the mozzarella; mix well.
  8. Scoop some squash flesh and mix into filling.
  9. Fill squash halves, top with remaining mozzarella.
  10. Bake 10–12 minutes until cheese is melted and bubbly.

Notes

Use spicy sausage for extra kick or add chopped apple for sweetness.
