Method
- Preheat oven to 400°F (205°C).
- Brush squash halves with olive oil, season with salt and pepper, and place cut-side down on a baking sheet.
- Roast for 40–50 minutes until tender and caramelized.
- Cook sausage in a skillet until browned, breaking up into crumbles.
- Add onion and garlic; cook until softened.
- Stir in sage, thyme, paprika, salt, and pepper.
- Add breadcrumbs, Parmesan, and half the mozzarella; mix well.
- Scoop some squash flesh and mix into filling.
- Fill squash halves, top with remaining mozzarella.
- Bake 10–12 minutes until cheese is melted and bubbly.
Notes
Use spicy sausage for extra kick or add chopped apple for sweetness.
