Ingredients
  

Salad
  • 2 chicken breasts cooked and sliced
  • 3 cups green cabbage shredded
  • 1 cup purple cabbage shredded
  • 1 cup carrots julienned
  • 1 cucumber sliced
  • 1 cup mandarin oranges segments
  • 0.25 cup almonds toasted
  • 2 green onions sliced
  • 1 tbsp sesame seeds
Sesame Ginger Dressing
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp fresh ginger grated
  • 1 clove garlic minced

Method
 

  1. Place shredded cabbage, carrots, and cucumber in a large bowl.
  2. Add sliced chicken and mandarin oranges.
  3. Top with almonds, sesame seeds, and green onions.
  4. Whisk soy sauce, rice vinegar, honey, sesame oil, olive oil, ginger, and garlic.
  5. Drizzle dressing over salad and toss gently.
  6. Serve immediately.

Notes

Dress the salad just before serving to keep the vegetables crisp.
