Ingredients
  

  • 1.5 lb chicken thighs boneless, skinless
  • 2 lb sweet potatoes cubed
  • 1 cup Greek yogurt
  • 1 cucumber grated

Method
 

  1. Season sweet potatoes and spread on sheet pan.
  2. Season chicken and add to pan.
  3. Roast until chicken is cooked and potatoes are tender.
  4. Mix tzatziki ingredients.
  5. Serve chicken and potatoes with tzatziki.
