  • 4 chicken breasts or thighs
  • 1 lb baby potatoes halved
  • 12 oz green beans trimmed
Seasoning & Dressing
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp Italian seasoning
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 lemon juiced

Method
 

  1. Preheat oven to 400°F (200°C) and line a sheet pan.
  2. Place chicken, potatoes, and green beans on the sheet pan.
  3. Mix olive oil, garlic, Italian seasoning, paprika, salt, pepper, and lemon juice in a bowl.
  4. Drizzle over chicken and vegetables, tossing lightly to coat.
  5. Bake 30–35 minutes until chicken is cooked and potatoes are tender.
  6. Broil 2–3 minutes for extra browning if desired.
  7. Garnish with fresh parsley and serve warm.

Notes

Use thighs for extra juiciness and add cherry tomatoes during last 10 minutes for more color.
