Method
- Preheat oven to 400°F and line a sheet pan with parchment paper.
- Toss sweet potatoes with olive oil, salt, and pepper and roast for 15 minutes.
- Mix olive oil, lemon juice, lemon zest, garlic, paprika, oregano, salt, and pepper.
- Coat chicken in the marinade.
- Add chicken to the sheet pan with sweet potatoes.
- Roast for 20–25 minutes until chicken is cooked through.
- Blend avocado, yogurt, olive oil, lemon juice, garlic, herbs, water, and salt until smooth.
- Serve chicken and sweet potatoes with avocado goddess sauce.
Notes
Add chili flakes for a spicy variation.
