Ingredients
  

Chicken and Sweet Potatoes
  • 4 chicken thighs or breasts
  • 2 sweet potatoes peeled and cubed
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 0.5 tsp oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
Avocado Goddess Sauce
  • 1 avocado ripe
  • 0.25 cup Greek yogurt or mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic
  • 2 tbsp parsley or cilantro chopped
  • 2 tbsp water
  • 0.25 tsp salt

Equipment

  • Mixing bowl
  • Blender or food processor

Method
 

  1. Preheat oven to 400°F and line a sheet pan with parchment paper.
  2. Toss sweet potatoes with olive oil, salt, and pepper and roast for 15 minutes.
  3. Mix olive oil, lemon juice, lemon zest, garlic, paprika, oregano, salt, and pepper.
  4. Coat chicken in the marinade.
  5. Add chicken to the sheet pan with sweet potatoes.
  6. Roast for 20–25 minutes until chicken is cooked through.
  7. Blend avocado, yogurt, olive oil, lemon juice, garlic, herbs, water, and salt until smooth.
  8. Serve chicken and sweet potatoes with avocado goddess sauce.

Notes

Add chili flakes for a spicy variation.
