Ingredients
  

  • 1.5 lbs baby potatoes halved
  • 3 tbsp olive oil divided
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 4 salmon fillets about 6 oz each
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 0.5 red onion sliced
  • 2 cloves garlic minced
  • 1 lemon sliced and juiced

Method
 

  1. Preheat oven to 400°F (205°C).
  2. Toss potatoes with olive oil and seasonings.
  3. Roast potatoes for 20 minutes.
  4. Add vegetables and garlic to pan.
  5. Place salmon on pan and season.
  6. Add lemon slices and roast 12–15 minutes.
  7. Finish with lemon juice and herbs.

Notes

Start potatoes first so they become golden and crisp.
