- Preheat oven to 425°F (220°C). Arrange sweet potatoes and onion on a sheet pan and season with olive oil, paprika, salt, and pepper.
- Roast for 15 minutes.
- Add sliced sausage, toss, and roast another 10–15 minutes.
- Whisk honey, garlic, soy sauce, olive oil, and vinegar to make sauce.
- Pour over roasted sausage and potatoes; roast 3–5 more minutes.
- Garnish with parsley and serve.
Notes
Add bell peppers or broccoli for extra vegetables.
