Sheet Pan
  • 1 lb smoked sausage sliced
  • 2 sweet potatoes peeled and cubed
  • 1 red onion sliced
  • 2 tbsp olive oil
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Honey Garlic Sauce
  • 0.25 cup honey
  • 3 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
Finish
  • parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C). Arrange sweet potatoes and onion on a sheet pan and season with olive oil, paprika, salt, and pepper.
  2. Roast for 15 minutes.
  3. Add sliced sausage, toss, and roast another 10–15 minutes.
  4. Whisk honey, garlic, soy sauce, olive oil, and vinegar to make sauce.
  5. Pour over roasted sausage and potatoes; roast 3–5 more minutes.
  6. Garnish with parsley and serve.

Notes

Add bell peppers or broccoli for extra vegetables.
