Ingredients
  

  • 4 large russet potatoes
  • 1 lb ground lamb or beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup peas and carrots frozen
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 tbsp butter
  • 0.25 cup milk

Method
 

  1. Bake potatoes at 400°F (205°C) until fork-tender.
  2. Brown ground meat in a skillet and drain excess fat.
  3. Add onion, garlic, and cook until softened.
  4. Stir in tomato paste, broth, seasoning, and simmer until thick.
  5. Scoop potato flesh and mash with butter and milk.
  6. Fill potato skins with meat mixture and top with mashed potatoes.
  7. Bake again until lightly golden and serve hot.

Notes

Use lamb for traditional flavor or beef for a familiar twist.
