Ingredients
  

Baked Potatoes
  • 4 large russet potatoes
Shepherd’s Pie Filling
  • 1 lb ground lamb or ground beef
  • 1 onion chopped
  • 2 carrots diced
  • 1 cup peas
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup beef or vegetable broth
  • 1 tsp dried thyme
Mashed Topping
  • 2 tbsp butter
  • 0.25 cup milk or cream

Equipment

  • Large skillet
  • Mixing bowl

Method
 

  1. Bake potatoes at 400°F (200°C) until tender, about 50–60 minutes.
  2. Cook onion and carrots in a skillet until softened. Add garlic and ground meat and brown.
  3. Stir in tomato paste, Worcestershire sauce, broth, thyme, salt, and pepper. Simmer and add peas.
  4. Scoop potato flesh and mash with butter and milk.
  5. Fill potato shells with meat mixture and top with mashed potatoes.
  6. Bake assembled potatoes 15–20 minutes until heated through and lightly golden.

Notes

These stuffed potatoes can be assembled ahead and baked just before serving.
