Method
- Bake potatoes at 400°F (200°C) until tender, about 50–60 minutes.
- Cook onion and carrots in a skillet until softened. Add garlic and ground meat and brown.
- Stir in tomato paste, Worcestershire sauce, broth, thyme, salt, and pepper. Simmer and add peas.
- Scoop potato flesh and mash with butter and milk.
- Fill potato shells with meat mixture and top with mashed potatoes.
- Bake assembled potatoes 15–20 minutes until heated through and lightly golden.
Notes
These stuffed potatoes can be assembled ahead and baked just before serving.
