Ingredients
  

  • 3 Persian cucumbers finely diced
  • 3 tomatoes finely diced
  • 0.5 red onion finely chopped
  • 0.25 cup fresh parsley chopped
  • 2 limes juiced
  • 2 tbsp olive oil optional
  • salt to taste
  • black pepper to taste

  • Mixing bowl

Method
 

  1. Finely dice cucumbers and tomatoes.
  2. Finely chop red onion and parsley.
  3. Combine vegetables in a bowl.
  4. Add lime juice, olive oil, salt, and pepper.
  5. Toss gently and chill before serving.

Notes

Best served fresh. Drain excess liquid if storing.
