Ingredients
  

Salad
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 0.5 tsp paprika
  • 0.25 tsp garlic powder
  • 2 avocados diced
  • 1.5 cups cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.25 cup red onion chopped
  • 2 tbsp fresh cilantro chopped
Dressing
  • 2 tbsp lime juice
  • 2 tbsp extra virgin olive oil
  • 0.5 tsp honey optional
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Season and cook shrimp until pink and opaque.
  2. Combine chopped vegetables in a bowl.
  3. Whisk dressing ingredients together.
  4. Add shrimp to vegetables, pour dressing over, and toss gently.

Notes

Add avocado just before serving to prevent browning.
