Ingredients
  

Cranberry Bread
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 2 eggs large
  • 0.75 cup milk
  • 0.5 cup vegetable oil
  • 1.5 cups fresh cranberries
  • 1 tbsp orange zest

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Whisk flour, sugar, baking powder, and salt.
  3. Mix eggs, milk, oil, and orange zest.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in cranberries gently.
  6. Pour batter into loaf pan.
  7. Bake 50–55 minutes until set.
  8. Cool before slicing.

Notes

Do not overmix to keep bread tender.
