Method
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Cook the bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels to drain, then chop into small pieces. Set aside.
- If using frozen fries, bake according to package directions until golden and crispy. If using fresh potatoes, cut into fry shapes, toss with olive oil, salt, and pepper, then bake for 25-30 minutes, flipping halfway through.
- While fries are cooking, prepare your sauce by mixing sour cream, mayonnaise, and ranch dressing (if using) in a small bowl. Set aside.
- Remove fries from oven and immediately sprinkle both cheeses evenly over the hot fries. Return to oven for 2-3 minutes until cheese is melted.
- Remove from oven and quickly sprinkle chopped bacon over the melted cheese.
- Drizzle the prepared sauce over the loaded fries in a decorative pattern.
- Garnish with chopped green onions, fresh chives, and a light dusting of paprika.
- Add hot sauce if desired and serve immediately while hot and crispy.
- Serve with additional napkins and enjoy this indulgent comfort food creation!
Notes
For extra crispiness, use the double-frying method for fresh potatoes. Store leftovers in refrigerator for up to 2 days, though they're best enjoyed fresh and hot.
