Ingredients
  

Salad
  • 4 cups seedless watermelon cubed
  • 1 English cucumber sliced
  • 0.75 cup feta cheese crumbled
  • 2 tbsp fresh mint chopped
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

  1. Combine watermelon and cucumber in bowl.
  2. Add feta and mint.
  3. Drizzle lime juice and olive oil.
  4. Season lightly and toss gently.
  5. Chill briefly and serve.

Notes

Best served fresh. Drain excess liquid if storing.
