Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix peanut butter, granulated sugar, and brown sugar in a small bowl until smooth.
- Add beaten egg and vanilla extract and mix until well combined.
- Stir in flour, baking soda, and salt to form cookie dough.
- Fold in optional chocolate chips.
- Shape dough into a ball and place on baking sheet. Flatten with fork to create crisscross pattern.
- Bake 9–11 minutes until edges are lightly golden.
- Cool 5 minutes before enjoying.
Notes
Do not overbake to keep the cookie soft and chewy.
