Ingredients
  

  • 2 tbsp olive oil
  • 2 medium zucchini sliced into half-moons
  • 8 oz cremini or baby bella mushrooms sliced
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground
  • 1 tsp Italian seasoning
  • 1 tbsp butter optional
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add mushrooms and cook 3–4 minutes until golden.
  3. Add garlic, salt, pepper, and Italian seasoning; stir 30 seconds.
  4. Add zucchini and sauté 4–5 minutes until tender-crisp.
  5. Stir in butter (if using), taste, and adjust seasoning.
  6. Garnish with parsley and serve warm.

Notes

For a spicy version, add red pepper flakes or chili oil before serving.
