- Heat olive oil in a large skillet over medium-high heat.
- Add mushrooms and cook 3–4 minutes until golden.
- Add garlic, salt, pepper, and Italian seasoning; stir 30 seconds.
- Add zucchini and sauté 4–5 minutes until tender-crisp.
- Stir in butter (if using), taste, and adjust seasoning.
- Garnish with parsley and serve warm.
Notes
For a spicy version, add red pepper flakes or chili oil before serving.
